There are those dishes you always welcome ideas for preparing or modifying, while others should pretty much be left to their classic interpretations and don’t need constant reinvention. A hundred ways to make a casserole? Sure, sounds good. A hundred ways to make a bouillabaisse? I’ll pass on that one, but thanks for offering…

 

My mind wanders now to Tom Colicchio’s tasty little 2009 ode to sandwiches, ’wichcraft. Clever title aside, it won me over for its inventive suggestions for making what most people consider a pretty simple, straightforward lunch staple.  

 

And, seeing as we’re entering into the BBQ season what dish could use its own standalone tribute in the printed form? Wouldn’t you know it, Rachael Ray’s already on the case with her newest release this week, The Book of Burger, (Atria Books, 2012).

 

The title evokes thoughts of great, epic chapters from religious tomes—and, in my world, burgers deserve this divine treatment. There are over 300 recipes devoted to “the one” complemented with suggestions and instructions on how to make condiments, sauces, and breads.

 

She’s even included Bobby Flay’s iconic Louisiana Burger and Masaharu Morimoto’s Japanese-inspired Kakuni Burger. For grill-masters looking for a way to keep it fresh all summer long, this book might very well be your saving grace.

 

Below is a sample recipe for you to try. It’s very fall-influenced, but you can try it now with a summer squash and reap the same flavour payoff. Also, if you’re so inclined, you can enter to win a copy of the book, too :)

Sage-Scented Burgers with Fontina and Roasted Squash
Serves 4

Ingredients

1/2 small butternut squash or 1 acorn squash, peeled and sliced in 1/4-inch thick- rounds
EVOO (extra-virgin olive oil), for drizzling
A few grates of nutmeg
Kosher salt and pepper
4 tablespoons (1/2 stick) butter
12 sage leaves
1 pound ground veal
1/2 pound ground beef chuck
1 large clove garlic, grated or pasted
A handful of grated Parmigiano-Reggiano cheese
1/2  to 3/4 pound Fontina Val d’Aosta or other Fontina cheese or Taleggio cheese, sliced
Good-quality honey
4 sesame brioche rolls, split and lightly toasted
 

Directions 

Preheat the oven to 425 F.

Lightly coat the squash slices with EVOO. Season with nutmeg, salt, and pepper and spread the rings out on a baking sheet. Roast until tender and browned at the edges, 18 to 22 minutes.

Meanwhile, heat the butter in a skillet over medium heat until it foams. Increase the heat a touch and add the sage leaves. Cook until crisp. Transfer to paper towels to drain. Chop the sage leaves and reserve the brown butter separately.

In a large bowl, combine the veal and beef with the chopped crispy sage, the garlic, and Parmigiano-Reggiano; season with salt and pepper and mix thoroughly. Score the mixture into 4 equal pieces and form them into patties slightly thinner at the center than at the edges for even cooking and to ensure a flat surface (burgers plump as they cook). Drizzle the patties with EVOO.

Heat a griddle or large cast-iron skillet over medium-high heat. Cook the burgers, flipping once and basting with the reserved sage butter, 10 minutes for medium (adjust the cooking time for rarer or more well done burgers). Top the burgers with Fontina during the last minute or two of cooking, tenting the pan with aluminum foil, if you like, to help melt the cheese.

Drizzle the cooked squash with honey. Place the burgers on the roll bottoms and top with the squash. Set the bun tops in place.

Giveaway Rules
The following are the giveaway rules (“Rules”) for the Book of Burger giveaway (the “Giveaway”) being administered by Shaw Media (“Shaw”).
 
RULE 1. HOW TO ENTER
NO PURCHASE NECESSARY. To enter, entrants must answer the question posted above correctly, as determined by a Shaw representative. The Giveaway shall run from June 6, 2012 to June 13, 2012 after which time no answers will be considered.
 
RULE 2. SELECTION OF WINNER
Upon completion of the Giveaway, a Shaw representative shall review the answers submitted by each entrant to determine which entrant answered the question correctly. From the entrants that correctly answered the question, Shaw will randomly select the prize winner (“Winner”) and provide the prize to the winner. For the purposes of this Giveaway and the awarding of prize, these Rules shall govern in all respects and the decision of any Shaw representatives shall be final.
 
RULE 3. PRIZE
There five prizes available to be won, which consists of one copy of Rachael Ray’s The Book of Burger cookbook (“Prize”). The approximate value of the Prize is twenty-four dollars and ninety nine cents Canadian (CDN $24.99).

 

RULE 4. GENERAL
By participating in this Giveaway, you agree to abide by these Rules and the decisions of Shaw in awarding the Prize, which decisions shall be final and binding upon all entrants. Entrants who have not complied with these Rules are subject to disqualification. Shaw reserves the right to modify the Rules, before or during the Giveaway, in its sole discretion, in any way at any time it deems necessary or appropriate without materially affecting the terms and conditions of this Giveaway. Interpretation of these Giveaway rules by Shaw shall be final.

Personal information collected during the course of this Giveaway shall be used by Shaw and its authorized representatives solely for the purposes of conducting the Giveaway and awarding prizes, and will not be used or disclosed for any other purpose unless required by law.

 The Prize is not transferable and not redeemable for cash, will not be extended under any circumstances and must be accepted as offered without substitution.
