Baked potatoes are a staple to any meal but they can get pretty boring. We have the perfect way to spice up that ordinary potato; just add some bacon bits! This will take your baked potato from good to seriously delicious. This is a great side with almost any meal, or even just by itself!

Cook Time: 1 minute
Total Time: 1 hour, 10 minutes
Serves 2
Ingredients:
1 teaspoon extra-virgin olive oil
2 baking potatoes
2 strips thick-cut bacon
3 tablespoons sour cream
freshly chopped chives
salt
Instructions:
1.Preheat oven to 350F. Prick potatoes a few times with a fork or small pairing knife. Rub potatoes with oil and sprinkle with salt. Bake directly on the racks of the oven for 1 hour until tender, do not over-bake.
2.Meanwhile, cook bacon in a skillet over medium-high heat until crispy. Transfer onto paper towel to drain. Break into bite-sized pieces.
3.Cut a slit in the top of each of the potatoes. Top with sour cream, freshly snipped chives and crispy bacon bits. Serve immediately.
