Burger

can black beans

red onion

clove garlic

cup uncooked quinoa

sweet potato

tsp ground cumin

tsp chili powder

tsp paprika

cup cilantro

cup spelt flour

tsp sea salt
Simple Guacamole
1
- 2 avocados
½
lime, squeezed
4
cherry tomatoes, chopped

Step 1
Preheat oven to 350°F or heat grill.
Step 2
Place ¼ cup of quinoa in a pot with 1 cup of water, bring to a boil and simmer for 15 minutes.
Step 3
Place all other ingredients, except for the simple guacamole, into a good processor and blend until it’s a smooth yet textured consistency.
Step 4
Place in a bowl and add the quinoa. Mix and shape into patties.
Step 5
Place in the oven and bake for 25-35 minutes. Or place on grill for about 10 minutes per side. You may want to place the burgers on tinfoil over the grill to prevent them from crumbling and falling through.
Step 6
Meanwhile, mix together the simple guacamole. Top the cooked burgers with guacamole and serve.
