Ingredients

2 cups granulated sugar
2 medium apples
2 tablespoons lemon juice
Cinnamon, optional

Instructions
1.With a knife, carefully trim off one side of the apple so it rests flat. Using a knife or mandolin, thinly slice apples into rounds 1/16-inch thick. Discard the remaining round portion of the apple. Using the tip of a pairing knife, remove any seeds or fuzzy bits around the stems. Transfer to a bowl of cold water with lemon juice.
2.Preheat oven to 250F. Line two baking sheets with parchment paper.
3.Make a simple syrup by combining 2 cups granulated sugar and 2 cups water in a pot. Bring to a boil, stirring until sugar has dissolved, continue to cook without stirring for 5 minutes.
4.Pat apple slices dry between paper towels. Toss with simple syrup and carefully arrange in a single layer on the parchment paper-lined baking sheets. (If using cinnamon, sprinkle it on)
5.Transfer to the oven and bake for 20-30 minutes until crisp and the edges have curled slightly. Remember they will continue to crisp as they cool.
