Cibo Trattoria is located at the Moda Hotel, nestled in the heart of downtown Vancouver’s arts and cultural district. We serve locally-sourced, casual Italian cuisine, in a cozy dining room with a relaxed atmosphere. As a child growing up in North Vancouver, B.C., I was inspired to pursue a career as a chef by the flavourful home cooking of both my mother and grandmother. Now, as the Executive Chef at Cibo Trattoria (and the adjacent UVA Wine & Cocktail Bar), I strive to embody that spirit with a rustic Italian menu that showcases the highest quality local and seasonal ingredients.
At Cibo’s own farm, Campagna Farm, located in Abbotsford, B.C., a husband and wife team of veterinarians, responsibly raise cattle for our menu. This farm-to-table approach is the inspiration behind dishes like the Campagna Beef Crudo, which I’ve featured below. I have also hand-selected other recipes that best showcase my culinary philosophy, and that are perfect for summer entertaining, or simply enjoying a quiet meal at home. Lauren Mote, Bar Manager at UVA, has also contributed one of her inventive cocktail recipes.
