Chef Vikram Vij
Vikram Vij is a Vancouver-based Chef, restaurateur and cookbook author whose television appearances include guest judge on the first season of Top Chef Canada. Born in India in and raised in New Delhi and Bombay Vikram moved to Canada in 1984 to work at the Banff Springs Hotel in Alberta. In 1994 Vikram opened Vij’s Restaurant in Vancouver, BC. In 2002, Vikram and wife Meeru opened up a second restaurant and market called Rangoli. In 2010 the couple began selling Vij’s gourmet curries (available throughout Canada), which are cooked by hand and are original, popular recipes from Vij’s restaurant. With Meeru, Vikram has penned two cookbooks: Vij’s: Elegant and Inspired Indian Cuisine and Vij’s at Home: Relax, Honey. Vikram and Meeru live in Vancouver with their two daughters.

Your fave kitchen utensil/gadget?
My fave kitchen gadget is a bottle of wine -- without that I cannot even think of starting cooking.
What would we typically find in your fridge?
Lots of different ethnic sauces and leftover meats because I cook a lot of it and usually have left overs from that one day.
Your signature dish?
Lamb and Potatoes
What were your must-have kitchen layout requirements?
A big, huge butcher block with some really sharp knives.
What was your biggest kitchen splurge?
An old world gas commercial stove that I picked up from an auction with 30,000 BTUs.
Where did you get your love for cooking?
Growing up in India, my grandparents and my parents were a huge influence.
Your guilty food pleasure?
Cheap Indian snacks
Low-fat foods (and the people who buy them because they believe they can lose weight with them).
Fave cookbook authors?
So many but Meeru, my wife, is a great author of books and stories.

That I do not cook Indian food at home. By the time I cook at home, I am curried out. I usually cook French or Italian food or a mix of different flavours.
