Lemony Prosciutto-Wrapped Shrimp

Ingredients

  • 1 lemon
  • 1 pound (454 g) fresh or frozen (and defrosted) Jumbo Black Tiger Shrimp, uncooked, peeled and deveined with tails on
  • Generous pinches of freshly ground black pepper
  • 4 to 5 slices of prosciutto

Directions

  1. Preheat oven to 375F (190C).
  2. Finely grate 1/2 tsp (2 mL) peel from lemon. Place peeled shrimp in a medium bowl. Sprinkle with lemon peel and ground pepper. Toss to evenly coat. Cut each slice of prosciutto, crosswise, into 4 pieces. The amount of prosciutto required will vary depending on the amount of shrimp. Wrap a piece of prosciutto around the centre of shrimp, then place on a baking sheet. Continue with remaining ingredients, spacing shrimp apart.
  3. Bake wrapped-shrimp in centre of preheated oven until shrimp are pink, 4 to 5 minutes. Squeeze some juice from lemon overtop. Serve warm.
