Welcome to our first post for July’s Gluten Free month. This month, we’ll be demonstrating how delicious and exciting a gluten-free diet can be. From breakfast to dinner and snack time to dessert we’ll have dozens of recipes that will get you excited about stepping into the kitchen.

 

To kick off our Gluten Free month, we asked Megan Henry of The Gut Gazette to share her story with us. In today’s episode Megan teaches us her secret to healthy rice paper wraps. This is a dish her whole family loves and keeps Megan in the kitchen enjoying her new journey as a gluten-free eater. From the easy-to-make rolls to her secret gluten-free sauce, she’s got some great tips to share about loving a gluten-free lifestyle.

Rice Paper Rolls with Tamari Dipping Sauce

 

Prep Time: 20 minutes

Total Time: 20 minutes

 

Ingredients:

 

8 medium-large rice paper sheets

1 large bowl room temperature water

1 cup sliced cucumber

2 cups shredded chicken

1 cup mung bean sprouts

1 cup sliced mango

1 cup sliced red pepper

1 cup shredded lettuce

2 tablespoons liquid honey

2 tablespoons balsamic vinegar

¼ cup tamari (gluten-free/wheat-free soy sauce)

Garnish: lime wedges, cilantro and crushed peanuts

 

Instructions:

 

1. Prepare all of the ingredients.

2. Make the dipping sauce by whisking together honey, vinegar and tamari. Set aside.

3. Submerge the rice paper rolls into the bowl of water one at a time or in batches of two. Let them sit for 30-45 seconds until softened. Remove and carefully pat dry on a tea towel.

4. Arrange ingredients in the middle of the rice paper sheet like a fajita, leave a 1 1/2 – inch border on either side of the ingredients.

5. Fold the sides of the rice paper sheet oven the ingredients. Grab one edge of the sheet and carefully fold over the ingredients and using hands help secure the ingredients as you roll the rice paper into a log. (See video for easy rolling guide.)

6. Set on a plate and repeat with remaining rolls. Refrigerate until ready to serve.
