Ingredients

Adobo Pork Shanks

  • 12 3 inch thick pork shanks
  • 3 tablespoons canola oil (45 ml)
  • 2 leeks, finely chopped
  • 1 head of garlic, smashed
  • 1 inch ginger, chopped
  • 2 lemongrass, finely chopped
  • 2 cups veal stock (500 ml)
  • 1 cup malt vinegar (250 ml)
  • 1 cup soy sauce (250 ml)
  • 1 cup milk from 1 fresh coconut (250 ml)
  • 1 dried ancho chili pepper
  • Salt and pepper

Garnish

  • 3 green onions, finely chopped

Directions

Adobo Pork Shanks

  1. Preheat oven to 180 C (350 F).
  2. Season the meat with salt and pepper. In a heavy ovenproof pan, on high heat, sear the meat on all sides in canola oil about 5 minutes on each side. Add the vegetables and continue cooking for 2-3 minutes until fragrant.
  3. Add the remaining ingredients, to the pan and cook in the oven for about 3 hours or until the meat is fork tender. Keep warm.
  4. Garnish with green onion.
