Jaime's Chorizo Enchiladas

Recipe summary

Ingredients

Chorizo

  • 2 guajillo dried chiles, rehydrated, seeded
  • 1 dried ancho chile, rehydrated, seeded
  • 1 tablespoon (15 mL) smoked paprika
  • 1 teaspoon (5 mL) ground cumin
  • 1 teaspoon (5 mL) ground coriander seeds
  • A few sprigs of oregano, chopped
  • 4 cloves garlic, minced
  • 1/4 cup (60 mL) red wine vinegar
  • 2 pounds (1 kg) ground pork
  • 1 teaspoon (5 mL) salt
  • 2 tablespoons (30 mL) olive oil
  • freshly ground pepper
  • water if necessary

Garnish & Assembly

  • refried beans
  • pico di gallo
  • queso fresco cheese
  • tortillas

Directions

Chorizo

  1. For the chorizo, using the food processor, process all the ingredients except oil until combined. Season with salt and pepper. In a large skillet, heat oil on medium-high heat and cook the meat, stirring until the meat is cooked, about 10 minutes. Add a little water to keep the meat moist if necessary.

Garnish & Assembly

  1. Serve on tortillas with refried beans, pico di gallo and cheese.
