Recipe summary

This simple pastais bursting with fresh herb flavour. Courtesy of Vito Gigante of Vito's Lotsa Pasta.

Preparation time: 5 minutes
Cooking time: 180 minutes
Yield: 4

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 5 cloves garlic, minced
  • 1/4 cup parsley
  • 1 28 ounce can plum tomatoes
  • 4 fresh basil leaves
  • 1 teaspoon oregano
  • 1/2 teaspoon crushed red pepper
  • Salt to taste

Directions

  1. Sautee garlic, oil and parsley in medium size sauce pan. Add the tomatoes and bring to a boil.
  2. Lower heat. Add basil, oregano, crushed red pepper flakes, and salt. Let simmer 2-3 hours.
  3. Serve immediately over your favorite pasta.
