Ingredients

Stir Fry

  • 1 pound shrimp, deveined and tails removed
  • 2 large very ripe tomates
  • 1/3 cup ketchup
  • 1 medium sweet onion, cut in half and sliced
  • 3 stalks celery, chopped
  • 1/2 teaspoon ginger, grated
  • 1 teaspoon granulated sugar
  • 2 teaspoons curry powder
  • 2 cloves garlic, peeled and sliced
  • 1 teaspoon garlic powder
  • 10 drops chili sauce
  • 1 teaspoon soy sauce
  • 3 tablespoons canola oil
  • 1 teaspoon cornstarch
  • dill pickles for garnish

Sesame Carrots and Green Beans

  • 4 large large carrots, peeled and julienned
  • 1 handful green beans, trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt-free vegetable seasoning
  • 2 teaspoons sesame seeds
  • 3 cloves garlic, crushed
  • seasoning salt

Directions

Stir Fry

  1. Marinate the shrimp in the soy sauce, garlic powder, and one teaspoon (5 ml) cornstarch for one hour.
  2. Place the tomatoes in a pot of boiling water for 1 to 2 minutes. Remove the skins and cut into 6 to 8 sections and set aside.
  3. Put 2 tablespoons (30 ml) canola oil in a hot wok, add the chopped onion and celery. Stir fry for 1 to 2 minutes.
  4. Add the ginger and garlic powder. Continue to stir fry until onions are soft.
  5. Add tomatoes, ketchup, pepper, chili sauce, sugar, and curry powder. Toss. Simmer for about 5 minutes.
  6. Heat remaining oil in a separate frying pan. Pan fry the shrimp on high heat just until done (the colour will change).
  7. Add tomato mixture into shrimp pan and mix.
  8. Serve with steamed rice and garnish with dill pickles.

Sesame Carrots and Green Beans

  1. Bring saucepan of water to boil, add carrots and green beans, boil until just fork tender (5 to 6 minutes).
  2. Drain. Heat olive oil in pot.
  3. Add garlic for and cook for 1 minute.
  4. Add vegetables, butter, and seasoning. Cook on medium high for 2-3 minutes until tender and slightly browned.
  5. Toss with sesame seeds and add seasoning salt to taste. Serve immediately with tomato shrimp and rice.
