Fresh with Anna Olson

Anna has a soft spot for classic recipes, so she pulls out some favourites that haven’t been seen in years, but like Sinatra and Dean Martin, these classics never go out of style. Anna’s Turkey Divan; turkey, broccoli and mustard are the key elements to this, but just watch what Anna does to them! The BEST Caesar Salad, Anna shows how to make a scratch Caesar Salad, without using uncooked eggs! And a Chocolate Blackout Cake that towers with flavour smothered with a fudgy chocolate frosting – glass of milk, anyone?

With Anna cooking French can be simple, gratifying and girlie, all at the same time. Mushroom Bisque under Puff Pastry Dome crack open revealing a steaming, creamy soup. Herbes de Provence Grilled Chicken uses a touch of lavender – very feminine! A Provencal Vegetable Tian, an elegantly simple dish of tomato, zucchini and eggplant – it looks like a tart, but without the crust, easy enough for a Tuesday but Saturday night impressive! And colourful French Macaroons! Put on your beret and grab your purse dog – these brightly coloured macaroons are all the rage and these are Anna’s version of a real Macaroon; get your taste buds ready these are like a trip to a Paris bakery in your very own kitchen!

Embrace an afternoon of cooking some comforting recipes that are great to make ahead...having these in the freezer or started in advance is like having money in the bank! Anna makes a Roasted Vegetable Lasagne with Four Cheeses where roasting the vegetables concentrates the flavour, and a creamy sauce sets everything in a memorable make ahead dish. Ciabatta Bread a “slipper” bread with its big airy holes and great crust and Pumpkin Carrot Muffins with Vanilla Frosting. The pumpkin and carrot add moisture to this recipe (so you don’t need a lot of butter) and they stay moist for days, if you can keep them that long!

For Anna sometimes cooking is all about just feeling good enjoy as she shares feel good foods that can lift your spirits all day long. Anna likes to start with a yummy Breakfast Polenta with Honeyed Fruits. Anna’s Braised Chicken in Red Bell Pepper Sauce is simple and comforting, this dish is a staple when Anna wants to lift her spirits. Brown Buttered Noodles with Peas is easy, fragrant and nothing is more feel good than brown butter! Ginger Tea and Lemon Poached Pears is the finish off this feel good meal made with a soothing ginger tea.

A weekend brunch means having time before the guests arrive to prepare a very relaxed and easy-to-do meal. Anna’s ‘theory of brunch’ starts sweet with a Breakfast Bread Pudding made out of slices of French toast, bananas and custard then moves to savoury with a Teriyaki Steak & Bean Salad and then back to sweet with a Vanilla Pound Cake that she serves with her Ginger Peach Jam a peak-season freezer jam with a contemporary spin and a Brunch Bellini is a perfect non alcoholic brunch beverage.

Peek into Anna's kitchen as she shares tips about her favourite apple varieties (and different uses). Apples are pretty much a year round staple for Anna but the crisp fall weather inspires her to share some of her favourite apple creations, and they’re not all dessert! Anna and her chef husband Michael love to cook for each other... and its Anna's turn. Don't be too surprised that his favourites are simple fresh recipes with real at home flavours. Potatoes don't have to be a mere side-dish, Anna makes them the centre of attention. For an appetizer Potato Rosti and great technique lie behind a classic Main; Potato Wrapped Chicken with Pancetta and Sage. Anna's take on Poutine is in the form of a Baked Potato, it becomes a delicious meal with homemade gravy and cheese curds. And to finish up a Potato Skins with Smoked Salmon and Cream Cheese!

Can you imagine living in Anna’s neighbourhood and experiencing the wonderful fragrances coming from her kitchen? Anna shares some of her most aromatic and appetizing dishes showcasing herbs and spices as the fragrances creep into every corner of the house. Spicy Pulled Pork Stew, taking pulled pork to a new a new level then making use of those tasty, fragrant juices when she dips her Warm Buttered Flatbreads with Double Coriander, great for dunking into stews and simple enough to make at the last minute, and a side dish to remember a Corn Spoonbread; a baked, rich custard-like dish filled with fragrant herbs and the sweet scent of fresh corn.

There's never a day that Anna doesn't enjoy cheese! Anna starts with her Cheddar Beer Soup. And you will never get tired of her Giant Ricotta Spinach Ravioli with Sage Butter; these are so big and so cheesy that you may only need one per person. And when you think cheese you may not think salad but think again with Anna's Endive & Radicchio Salad with Aged Cheese, Glazed Pine Nuts and Roasted Garlic Vinaigrette. And for the big cheesy finish Anna's builds delectable contrast into simple Honeyed Ricotta with Marsala Glazed Strawberries. This easy preparation tastes like a berry tiramisu with all the yum and none of the fuss.

Anna was thrilled what without even trying, a gluten-free meal materialized when she combined some of her favourites. Anna loves taking her time with slow cooked meals and this is an opportunity to experience an easy going cooking day at Anna’s house. These simple to put together recipes are flavoured by long cooking times, not long prep times, perfect when the weather starts to crisp up and we all crave long cooking recipes! Anna makes Country Style Ribs with a meaty cut of pork short-ribs in a stew-like Italian-style sauce, a Vegetable Tagine where everyday vegetables like cauliflower and sweet potato come to life in a fragrantly spiced dish. Her desert; individual Baked Apple Almond Cakes is a show stopper! Apples, hollowed out and filled with an almond cake– a baked apple and cake all in one!

Anna's Grandma taught her so much about cooking these recipes come from her Grandma's repertoire. Many grandmothers make cabbage rolls but Anna is proud to share her Baba's Cabbage Rolls where humble ingredients shine! Anna grew up with great memories of making these Potato Cheddar Perogies with Grandma and it's a tradition she still continues. And a real treat is the Eastern European tradition of Fruit Filled Perogie, Anna makes hers with a killer caramel sauce! Grandma's Sour Cream Doughnuts are more than a fond memory as they are so easy to make they are a staple in Anna kitchen, not a yeast dough, you don't have to wait long to fry up these tasty tidbits and toss in your favourite coating!

Anna’s showcasing her style through photos, and we’re not talking about fashion. Gorgeous and delicious is what’s getting the attention of this photographer: spring pea soup with mint, fiddlehead salad with pickled red onions and maple toasted pecans, and a smoke salmon crepe torte. With a trip to one of the few fiddlehead farms in Ontario for the freshest crop, these appetizers not only satisfy the cravings for great food but serve as great eye candy as well!

Anna takes a trip to Cherry Lane Orchards to grab the finishing touches for a baby shower she’s hosting for her pastry chef. As the gifts are revealed so are the appetizers and desserts: goat cheese truffles, cornbread muffins with baby shrimp salad, and baby cherry pies. It’s a great day with great company, great food, and great weather, all in Anna’s backyard, on this episode of fresh.

Anna prepares a huge buffet feast for her friends and family before a wine festival parade. Anna does all the prep work the night before: overnight baked ham with Riesling mustard glaze, loaded potato bake, and grilled apple salad all of which can be served at room temperature,( perfect for a buffet). It’s a gorgeous day and Anna’s cooking up a brunch feast southern style on the front porch: fruit & nut muesli, eggs Benedict with pea meal on scallion waffles with tomato cream, summer sunshine smoothies, and a moist date raisin loaf that will have you coming back for seconds. Anna takes a morning trip to see Lyle the egg man at Welland market, and then slows it down in the afternoon coasting on the water.

Anna’s having chef’s for dinner. German inspired flavours linger in Anna’s kitchen as she creates: brioche toast with brandied mushrooms in cream, braised beef short ribs over mustard seed spaetzle, and citrus red cabbage. A meal of local fresh foods elegantly plated with the company of talented colleagues makes this episode or fresh another must see!

It’s hot and spicy at Chili Fest, and Anna’s the judge on who makes it to the US competition. At home Anna spices it up with: Red pepper jelly with cheddar crackers and three pepper chicken chili. Anna shares her knowledge of the culinary arts to her guests at the Good Earth Cooking School. Anna creates sample dishes to inspire the students to make what they taste: chilled grilled seafood salad, homemade pasta with garden vegetables, and apricot preserves. In this class, your hard work not only pays off but it tastes great.

Anna & her husband Michael serve hors d’oeurves at an event appropriately named Farm-to-Table. At home Anna plans ahead and assembles everything she will be bringing to the event: heirloom tomato salad, corn shrimp fritters with cucumber rémoulade, and chicken terrine with onion marmalade. Picking up the fresh heirloom tomatoes at Linda Crago’s, this event is going to be a sure success, and a whole lot of fun!

There is nothing better than enjoying the great outdoors with great food. It’s the long weekend and Anna’s slowing it down with: beet and goat cheese terrine, herb and vegetables stuffed striped bass, corn blueberry salad, and French custard ice cream with wine-steeped plums. With the company of great friends and a trip to a local winery to pick up her wine for dessert, nobody is going to be looking forward to work Tuesday morning.

Anna hosts a trip planning party where she and some of her friends plan their spring vacation to Tuscany. Inspired by Italian flavours Anna creates: ribollita (vegetable soup), tortellini with fennel cream, and sienna pan forte. Anna and her husband Michael have auctioned off there cooking services at a lakeside home. As she teases the audience with her culinary skills she creates: Ricotta stuffed zucchini flowers with roasted red pepper pesto, poached salmon with basil mousseline, Israeli couscous with olives, arugula and feta, and finally brings it all together with summer fruit and ice-wine sabayon. How much would you bid on lunch being this fresh?

It’s Treasure hunting time. With appetites the size of jungle animals, Anna kicks it into high gear and prepares: honey oat roasted pears, mushroom smoked cheddar frittata, sweet potato home fries, and chocolate griddle cakes with cinnamon peaches. A day trip to St. Catharines’ Market and hitting up some of the local garage sales makes this episode of fresh one you don’t want to miss.

Anna speaks to culinary & broadcasting students during a graduation celebration where she receives an honorary degree from Niagara College. Following the ceremony Anna kicks her culinary skills into high gear. Herb roasted chicken breasts, spring pea and rice salad, asparagus with a rhubarb hollandaise, and mini lemon meringue cheesecakes is a great way to wrap up an amazing night. With a trip to the local asparagus farm, family and friends around the table, and Anna’s accomplishments recognized, what better way to start off the second season of Fresh!

It’s a day with the girls and Anna has her grilling mitts on. Miso grilled eggplant with scallops, grilled halibut with tomato vinaigrette, herb grilled corn on the cob, and chocolate hazelnut cheesecake. Before the girls arrive Anna takes a trip to Aceto Niagara the makers of the unique Niagara product ice wine vinegar.

Its grilling season! The barbeque is out, the friends are over, and the wine is corked. Watch Anna pair great food with great wine while doing a grilling demo for a local wine release event called the New Vintage Grille. Dry glazed pork tenderloin, grilled asparagus with creamy garlic almond sauce, and onion marinated grilled sirloin with spicy spring salsa, sounds mouth watering doesn’t it? When you find yourself snacking more than eating meals, why not just make a meal out of snacks. It’s a night with the girls at Anna’s and they’re nibbling on snacks during their clothing exchange: gyoza dumplings, wild rice risotto pockets with peppers and pumpkinseeds and maple baked apple bites. Snacking doesn’t have to be a guilty pleasure, learn how healthy it can be, and indulge in this episode of fresh!

Anna’s visiting her friend Susan at her lakeside home for High Tea. Ham and scallion scones with lemon herb chèvre, salad bundles with marinated peppers, and a light as air strawberry shortcake torte makes this little trip feel more like a vacation. Anna and her husband Michael do less hiking and more picnicking. On there romantic day trip they indulge in sweet & salty trail mix, fajita turnovers, minted limeade, garlic coleslaw and brown butter cookies. It’s a day to celebrate the efforts of everyone who has worked towards the opening of Anna’s new fine food store. Anna works her creative juices at home to create sumptuous hors d’oeuvres for the team to take a break and enjoy: white pizza with spelt crust, truffled white bean salad in patty pan cups, and smoked trout mouse on buckwheat blinis. Anna takes a trip to the Wildflower Market for organic goodies before swinging by a golf tournament. As the golfers make their way through the course, Anna has prepared: Sesame pumpkinseed snaps, chorizo cheese potato wraps, and butterscotch white chocolate brownie bites. Its opening night at the Shaw Festival and Anna’s preparing something simple before a night out at the theatre; Tender greens with marinated sweet cherries and almond vinaigrette, pan roasted trout with leeks and brown butter, and to finish it all off strawberry meringue tarts that melt in your mouth. In the midst of harvest, Ravine Winery is a sight to be seen, Anna delivers a fulfilling supper to the team of hardworking winemakers: Concord grape focaccia, whole roasted chicken with sweet potato stuffing, autumn celery root potato salad, and an easy apple tart that is suitable for any occasion. With gorgeous rolling vineyards, dinner on the table and a glass of wine in hand, this episode of fresh is a must see.

Put some funk in your fries and some jazz in your jam, have fun with a theme dinner with tasty takes on 50’s flavors. In this episode Anna makes: buttermilk friend chicken, fluffy biscuits, zucchini lemon slaw, and peanut butter and jam bread pudding. With a trip to Kurtz Orchards to pick up jam made from locally grown fruit puts everyone in high spirits, you will be asking for seconds from this episode of fresh.

Anna takes a trip to Morningstar Mills to pick up some flour. Back home she shares her old family recipes that are too good to be forgotten. Grandma’s potato cheddar bread, peameal bacon, green bean and cheese tart made with parmesan pastry, and walnut brie strudel, being on a diet is impossible when food tastes this good!

Anna takes advantage of the warmth of the last long summer days with a casual dinner on the front porch. After a visit to an evening farmers market Anna prepares: grilled salmon with balsamic onion glaze, swiss chard with pine nuts and pan roasted garlic, fluffy ricotta gnocchi with red pepper coulis, and for dessert peach frozen yogurt and pizelle. Delicious food, great company, amazing weather, and a sunset that will take your breath away, all on this episode of fresh!

Celebrating old friends and neighbours Anna has cooked up a delicious meal; herbed mushrooms and Asiago backed into brioche, fresh bean griddle cakes, lemon scented turkey salad, and raspberry chocolate tart. After a trip to a local raspberry farm, Anna brings the finishing touches to her welcome supper. The neighbours are in for a real treat!

When friends with kids come over for dinner, Anna likes to take a different approach to ensure that everyone enjoys the meal!  Anna prepares Sweet Onion Dip with Veggies, a Three Cheese Pasta Bake, Very Vanilla Cupcakes, and Maple Roasted Chicken Breasts with fresh maple syrup picked up from White Meadows Farm.

On a recent trip to France, Anna and Michael fell in love with Alsatian cuisine.  Inspired by their vacation, Anna is preparing a reminiscent meal including: Pain D’Epices, Choucroute Garni, and Tarte Flambe.  Anna heads over to Cave Springs Cellars winery to pick up some wine for the occasion, and their friends Tom and Anne come over to enjoy this fabulous meal.

Anna’s good friend April is getting married, and for her wedding shower Anna is preparing the perfect ladies luncheon.  Anna gets started on her Beet and Buttermilk Soup before heading out to see Andrew Vergalito at Italian Ice Cream to get the ingredients fro her fabulous Ice Cream Layer Cake.  The centre of the meal is her savoury Luncheon Sandwich Torte.

It’s beautiful outside, so why not join Anna and her friends for an impromptu beach party.  Anna prepares Roasted Pepper and Eggplant Salad and Three-Bean Salad before heading over to Minors Fisheries to pick up fresh local fish for her pièce de résistance: Lakeside Paella.  Her friends enjoy helping her cook on the beach- roasting their Potato Prosciutto Kebabs in an open fire and stirring the slow cooking Lakeside Paella to perfection right on the beach.

Anna and Michael just love games night, and their favourite game is charades!  Anna prepares easy party food to enjoy during the fun. Anna gets to work on her Vegetable Chowder before stopping by Picard’s Peanuts for ingredients for her Caramel Peanut Popcorn.  Anna also makes some Confetti Cornbread and her signature Anna’s Quesadillas before the festivities begin!

Join Anna as she opens her home to the staff of her shop for a BBQ party and cooks for a crowd.  Anna stops by her local butcher Hommer VanderMeer for fresh local meats for her fabulous recipes: BBQ Side and Back Ribs, Marinated Flank Steak Salad, and Mediterranean Potato Salad – the perfect summer BBQ feast!

Anna’s good friend Jennifer is getting married and Anna’s gift is a fabulous wedding cake: a 4 tier White Chocolate Wedding Cake filled with local fresh berries and toped with green fondant.  Anna also makes time to deliver three hors d’oeuvres to the bridle party before the event: Artichoke Asiago Squares, Devilled Eggs, and Champagne Shrimp on Endive.

The Pingues are local producers of fine Italian Prosciutto and other salamis, and are adamant foodies just like the Olsons.  In this episode of Fresh, Anna prepares an Italian feast for the two families that includes: Antipasto, Osso Bucco, Acini di Pepe, and Arugula Salad with Proscuitto Anna’s picked up from Mario Pingue’s local shop.

For the past eight years Anna has participated in the Eat to the Beat breast cancer fundraising event.  This event is all about healthy foods like Anna’s Blueberry Muffins, and elegant hors d’oeuvres like Turkey and Trimming Pinwheels, and Squash and Cheddar Soufflés.  See Anna in her full chef whites as this stunning event unfolds.

In this episode of Fresh Anna cooks up a hearty and healthy meal for her local firefighting friends.  These dishes are original in that they’re great served either hot or cold.  Anna stops by her friend Karen Whitty’s farm for fresh local peaches for her Peach Oatmeal Griddle Cookies, and cooks up her Salmon & Chickpea Toss and Sweet Potato Soup. 

Anna’s parents are stopping by for Sunday dinner, and there’s nothing like comfort food to give you that cozy reassuring family feeling.  Anna starts off with her Roasted Root Vegetables before heading over to visit her friend Karen Whitty at Whitty farms for some fresh pears for her sumptuous Pear & Spiced Chocolate Tart desert.  Anna finishes off with her main course, Whole Roasted Pork Loin.

Anna’s friends are in town and she’s throwing a spontaneous dinner party with French flair for these last minute guests.  Anna starts off with her Plum Clafoutis desert before heading to the Upper Canada Cheese Company to buy cheese for her Crème Fraiche Mashed Potatoes.  The meal is rounded out with Turkey Escalope, Citrus Haricots Vert, and Frisee Salad with Warm Comfort Cream – a fabulous meal made in a jiffy!

Michael’s foodie family is coming to town, and what better inspiration for her meal then the current country harvest.  Anna prepares Salmon with Horseradish Panko Crust, a Lemon Dill Butter Sauce, and Dandelion with Pancetta and Cider.  Anna heads over to visit with Jerry Howell at the Howell Farm for some seasonal pumpkin for her Pumpkin Crème Brulee desert.

Anna and Michael have an evening alone together, and Anna’s preparing an herb inspired romantic dinner. Anna starts off with her Individual Crème Brulee Cheesecakes before heading over to the Herbs by Daniel greenhouse to pick up some fresh herbs from her friend Bob Paterson.  With her seasonal fresh herbs Anna prepares Tomato Basil Tarts, a Tender Green Salad, and Seafood in Parchment Parcels with Herb Butter for a truly romantic meal.

It’s a day at the horses races for Anna and her friends, but first a casual outdoor lunch.  Travel with Anna to the local Fehrhaven Farms farm gate stand for fresh peaches to top off her decadent Triple Chocolate Brownies dessert.  Peameal Sandwiches with Coleslaw and French Fries with Caesar Dressing round out this perfect relaxing lunchtime meal.

Anna’s niece, singer/song writer Carrie Catherine, is in town playing for a local fundraiser.  In this episode of Fresh Anna prepares substantial finger foods for her guests: Potato Mushroom Bruschetta, and Rotisserie Chicken with four sauces: Red Lentil Dal, Tonnato Sauce, Easy Pepper Sauce, and Lemon Hummus.  Anna stops by the Port Colborne Farmer’s Market to pick up some fresh local produce for her recipes and while there, fraternizes with her fans.

The local jazz and blues fest is in full swing, and Anna has planned the perfect picnic with Michael and their friends Bob and Jean.  Stop by the local honey apiary Charlie-Bee with Anna and get a tour from Charlie himself.  Anna uses the fresh honey in her Club Sandwich Roll and rounds out the meal with a Wheat Berry Vegetable Salad, and a Jazzy Platz desert before packing it up for a music infused picnic lunch.

Anna’s been asked to judge a pie baking contest for the town’s local food festival, and this episode of Fresh is all about pie inspired recipes!  Anna stops by the Williams Apple Orchard to pick up ingredients for her Country Apple Pie, before creating her Potato Bisque with Bacon and Cheddar, and her special Anna’s Tourtiere.  Anna delivers her meal to her fellow judges before the pie tasting begins!

Anna’s friends Mike and Tina have a fabulous vegetable garden, and this year they’ve harvested more then they can handle.  This episode of Fresh is all about preserving and creating meals based around preserved foods.  Anna starts with her Super Burgers before she gets ready preserving her fabulous toppings: Chili Sauce, Red Pepper Jelly, and Pickled Green Tomatoes, and finishes off with a fabulous Tiramisu dessert.

The annual regatta is in town and everyone is in need of energy food to keep up the pace! Join Anna as she takes a tour of the Grimo Nut Nursery with Ernie and Linda Grimo and learns about various breeds of nuts, before she delivers her Granola Bars, Potato Vegetable Samosas, and Tofu Skewers with Walnut Pesto to her friend Katherine and a group of rowers. 

Anna’s friend Susan is celebrating her fiftieth birthday with a dinner celebration with friends.  For this significant event Anna is cooking up a fabulous Prime Rib main course with Mushroom Pan Juices.  Anna heads over to see her friend Cheryl at the Inn the Pines farm gate stand for fresh vegetables for her Squash and Ricotta Salad, and finishes off with Susan’s favourite desert, a Walnut Torte.  The guests arrive and everyone toasts the birthday girl along with the host with the most.

The relaxed Spanish style of enjoying tapas is an innovative way to share many flavours, and Anna has prepared four fabulous platters to share with her friends while enjoying glasses of flavour complimenting sherry.  Recipes include: Spanish Pinxos, Spanish Tortilla with Chorizo, San Sebastian Crab Tarts, and Gambas a la Plancha.  Anna stops by her shop to pick up some smoked paprika and Spanish olive oil before her friends stop by for this fabulous feast.

Michael’s had a busy week at work and his daughter Mika is busy with her school work, so comfort food is just what this family is asking for!  Nothing says comfort like a Perfect Pot Roast with Dumplings, Mae’s Broccoli Cheddar Salad (Michael’s Mom’s signature dish) and delicious Apple Cranberry Crisp.  Anna heads over to Niagara’s Best Brewery to get some beer for the pot roast before settling down for a relaxing feast.

Michael’s co-worker at the local college is hosting a working lunch and Anna is catering a vegetarian meal.  Anna begins with Vegetable Salad Rolls then heads over to friend David Irish’s farm for fresh peppers and sage for her Roasted Garlic Vegetable Tarts.  No meal is complete without desert, and Anna finishes off with a delectable Honey Yogurt Cheesecake.

Michael’s nephew Chris and his wife Ana are in town and they’ve been invited over for a lazy and relaxing brunch.  Anna gets a head start on the Blueberry Sticky Buns the evening before, and stops by the Muileboom Greenhouse for fresh tomatoes and cucumber for her fabulous Huevos Rancheros first thing in the morning.  The meal is rounded out with three fabulous Fruit Antipasti platters.

Winemaker’s dinners are a popular trend, and Anna has prepared this formal yet fun dinner to compliment her favourite red wines from her friend’s winery.  Anna’s recipes include:  Three Onion Couscous, Roasted lamb with Date Salsa, Parsnips Baked with Moroccan Spices, and for desert, Baked Figs with Honey and Yogurt.  Anna heads over to visit her friend Charles Barker and pick up her favourite wines at his Stratus winery before completing and presenting her fabulous meal.
