Ingredients

  • 8 ounces pkg cream cheese
  • 1/4 cup capers, drained (50 mL)
  • 1 small red onion
  • Zest of 2 lemons
  • Freshly ground black pepper
  • 2 ficelle (125g each) (mini baguettes)
  • 8 ounces smoked salmon, sliced (250 g)
  • 1 bunch chives

Directions

  1. In a food processor combine cream cheese, capers, red onion, lemon zest and pepper, and process until smooth. Set aside.
  2. Cut ficelles in half length-wise.
  3. Spread bottom half of baguette with cream cheese mixture
  4. Layer slices of smoked salmon and top with top half of baguette
  5. Place the bunch of chives in a bowl filled with boiling water
  6. Cut baguette into 12 slices depending on desired sandwich size.
  7. Tie with chive to hold together.
