Ingredients

  • 5 pounds Roma tomatoes, cut in half lengthwise
  • 2-3 oz. extra virgin olive oil
  • sea salt and cracked black pepper, to taste
  • 1 large onion, diced small
  • 2 cloves garlic, smashed
  • 2 tablespoons extra virgin olive oil
  • splash red wine
  • 1/2 litre vegetable stock
  • 4-6 large basil leaves

Directions

  1. Place the halved tomatoes onto a baking tray (skin side down).
  2. Sprinkle with olive oil – salt and pepper.
  3. Roast in 380 ºF oven – 45 minutes or until roasted and caramelized.
  4. Remove from heat.
  5. Pre-heat a medium saucepan – add olive oil with garlic & onions. Sauté for 5 minutes.
  6. Glaze with red wine and reduce heat.
  7. Add roasted tomatoes and vegetable stock.
  8. Bring to a low heat and allow to simmer for 30-40 minutes.
  9. Remove from heat – season with salt and pepper and whole basil leaves.
  10. Allow to cool.
  11. Pass the cooked sauce through a food mill and reserve until use.
