Smoky Chocolate Cheesecake And Pecans

Ingredients

Graham Wafer Crumb Crust

  • 2 cups graham crumbs
  • 1/2 cup butter, melted

Smoky Chocolate Cheesecake

  • 1 1/2 pounds cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3/4 pound chocolate chips, melted

Chocolate Ganache

  • 3/4 cup cream (35%)
  • 1 1/2 cups chocolate chips
  • 1 teaspoon vanilla extract
  • 120 pecans

Directions

Graham Wafer Crumb Crust

  1. Combine ingredients and press down into a spring-form pan.

Smoky Chocolate Cheesecake

  1. Note: All ingredients must be at room temperature.
  2. Melt chocolate on double boiler and set aside to cool.
  3. Beat cream cheese with sugar until slightly creamy.
  4. Add eggs one at a time scraping bowl between each addition.
  5. Add vanilla.
  6. Add melted chocolate and mix until all ingredients are combined. DO NOT OVER MIX.
  7. Pour mixture onto graham wafer crumb crust.
  8. Place cheese cake in small smoker.
  9. Add wood chips and turn on to 280 degrees Fahrenheit.
  10. Smoke for approximately 1 hour and 15 minutes until edges are set, but centre slightly jiggles.
  11. Set cheesecake aside in the fridge until cool.

Chocolate Ganache

  1. Bring cream to a boil and pour over chocolate chips.
  2. Whisk until smooth and add vanilla.
  3. Pour over chilled cheesecake.
  4. Place 12 pecans on each slice.
