cup (250 mL) UNCLE BEN'S® 7 Grains Medley

Tbsp (30 mL) Text-Mex spice blend
1
can (540 mL) black beans, drained and rinsed
1
cup (250 mL) corn
3
cup (750 mL) chicken, shredded
2
green peppers, chopped
2
cup (500 mL) Tex-Mex cheese blend, shredded
1
cup (250 mL) salsa
½
cup green onion, chopped
sour cream, for serving
guacamole, for serving

Step 1

Prepare UNCLE BEN’S® 7 Grains Medley with the spice blend.

Step 2

Preheat the oven to 350ºF (180ºC). Spread the back beans and corn over the bottom of a 9 x 13-inch (3 L) casserole dish. Top with chicken, green peppers, the grains, salsa and cheese.

Step 3

Bake, covered with foil, for 25 minutes or until heated through. Remove foil and broil for 3 minutes or until cheese is lightly browned. Sprinkle with green onion. Serve with sour cream and guacamole.

Step 4

Tip#1: Serve the leftovers with warm tortillas to make tacos or with nacho chips for a fun and interactive dinner.

Step 5

Tip#2: Omit the chicken and double the beans for a vegetarian friendly casserole.
