Ingredients

1 pound anchovies, heads removed, gutted and cleaned

1 ball buffalo mozarella, thinly cut

100 grams prosciutto cotto, thinly sliced

½ cup bread crumbs

1 large egg

½ cup flour

olive oil for frying

salt and pepper

Directions

1. Like a sandwich, lay the slices of prosciutto and mozzarella between two anchovy fillets and add salt and pepper. Dredge in flour, egg wash and then breadcrumbs. Fry in olive oil until golden.
