Anchovies in Love

A cute little snack featuring anchovies, buffalo mozzarella and prosciutto cotto fried in batter.
1 lb(s) anchovies, heads removed, gutted and cleaned
1 balls buffalo mozarella, thinly cut
100 g prosciutto cotto, thinly sliced
½ cup bread crumbs
1 large egg
½ cup flour
olive oil for frying
salt and pepper
1. Like a sandwich, lay the slices of prosciutto and mozzarella between two anchovy fillets and add salt and pepper. Dredge in flour, egg wash and then breadcrumbs. Fry in olive oil until golden.
