1 lb(s) anchovies, heads removed, gutted and cleaned
white wine vinegar
1 cup black olives
1 bunch fresh parsley, chopped
½ cup extra virgin olive oil for drizzling
salt and pepper
1. In a plate lay out the raw anchovies and add vinegar covering them. Let marinate and cook the anchovies for about 10 minutes or until anchovies turn white. Remove vinegar and pat dry anchovies. In a serving dish lay out anchovies, add olives, salt, and pepper. Finish with olive oil and parsley.
