If you order a mojito at a bar, they mottle the mint in the bottom of a glass with sugar, add lime juice and then rum and ice. This version keeps it family friendly, but feel free to add rum after the kids go down for their nap.Photo by Michael Olson.

ingredients

cup sugar
2 ½
cup water
1
bunch fresh mint (about ¾ cup), plus extra for garnish
1 ⅓
cup fresh lime juice

Step 1

Bring the sugar, water and mint, slowly up to a simmer. As soon as a simmer is reached, remove the pot from the heat, strain, and allow to cool to room temperature.

Step 2

in the lime juice and serve over ice, garnished with fresh mint.

Step 3

Makes 4 cups.
