2 pounds sweet potatoes

3 tablespoons olive oil

¼ teaspoon paprika

dash ground cumin

dash ground cinnamon

1 tablespoon lime juice

salt and pepper


1. Peel sweet potatoes and dice finely.

2. Heat a large sauté pan over medium high heat and add oil.

3. Add sweet potatoes, paprika, cumin and cinnamon and sauté, leaving to brown for a minute or two occasionally, until sweet potatoes are cooked through.

4. Immediately before serving, toss with lime juice and season to taste.
