Preheat oven to 500ºF (260ºC).
Drain the artichokes. Using an immersion blender, add artichokes, 4 tsp (20 mL) lemon juice, puree until smooth.
Add mascarpone to artichoke mixture and pulse until blended.
In a large bowl, whisk cream to stiff peaks. Fold mascarpone mixture into the cream. Place in fridge while preparing crostini.
Place bread slices on baking sheet, drizzle with olive oil and season with salt and pepper. Toast in oven for about 3 mins on each side or until golden. Remove from oven.
Pipe or spoon artichoke mousse on to crostini, garnish with cherry tomatoes, basil and lemon zest.
Note: You will have a little bit of leftover, just enough for the chef’s tasting portion!
