Asian Pea Salad

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour; you have to add your own!

Vegetables, Pepper, Salad, Nuts, No-Cook

Directions for: Asian Pea Salad

Ingredients

For the Dressing

3 Tbsp peanut butter

1 Tbsp soya sauce

1 tsp sesame oil

1 tsp of your favorite hot sauce

Juice of 1 lime

3 Tbsp brown sugar

Water

For the Salad

8 oz snow peas, thinly sliced

1 cup bean sprouts

1 red pepper, seeded and thinly sliced

1 carrot, peeled and shredded

1 small bunch cilantro leaves

6 green onions, sliced

½ cup shredded coconut

½ cup peanuts

Directions

For the Dressing

1. Whisk the dressing ingredients together in a small bowl, or place in a mason jar and shake well. Add enough water to thin dressing to the desired consistency.

For the Salad

1. Place snow peas, bean sprouts, red pepper, carrot, cilantro and green onions into a large salad bowl and toss well with the dressing. Garnish with the coconut and peanuts.
