Directions for: Asian Shrimp Salad

Ingredients

¼ cup rice vinegar

3 Tbsp soy sauce

2 Tbsp maple syrup

1 ½ lb. cooked, shelled shrimp

½ lb. snow peas, blanched

1 cucumber, sliced thinly on a mandoline

2 cup bean sprouts

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

4 green onions, finely chopped

1 cup chow mein-style fried noodles

1 pinch pepper

Directions

1. Dressing: In a bowl, combine the first three ingredients. Refrigerate.

2. Salad: In a salad bowl, toss the shrimp, vegetables and dressing. Season with pepper. Top with fried noodles. Serve the same day. If the salad is for the next day, dress the salad just before serving.
