Baked Perfect Pears with Ricotta and Brie

3 Bosc or Bartlett pears, halved and cored
2 Tbsp butter, melted
⅓ cup all-purpose flour
⅓ cup light brown sugar, packed
¼ cup sugar
½ tsp ground cinnamon
¼ cup ground nutmeg
¼ tsp salt
5 Tbsp unsalted butter, chilled
½ cup regular oats
½ cup chopped pecans
3 oz Brie Cheese
6 Tbsp Ricotta Cheese
3 Tbsp honey
1. Preheat oven to 375 °F. Place a pear half, flat-side up, into a baking dish and place on a baking tray. Brush pears with melted butter.
2. Pulse flour, brown sugar, sugar, cinnamon, nutmeg and salt to combine. Pulse in butter until a rough, crumbly texture. Pulse in oats and nuts just to combine. Pack crisp topping evenly over each pear and bake for 25 to 35 minutes, until pears yield when poked with a tester.
3. Slice pears and fan out in a baking dish and brush with butter. Sprinkle crisp topping our pears and bake for 20 minutes.
4. Slice a strip of brie and lay over baked pear and return to oven for 2 minutes. Spoon 1 tbsp of ricotta on top of the brie and drizzle with a little honey and serve.
