Combine flour, baking powder, baking soda and salt in large bowl. Add sugar, shortening, 1/4 cup (50 mL) milk and bananas. Beat on medium speed of electric mixer for 2 minutes. Add eggs, vanilla and 1/4 cup (50 mL) Natrel Lactose Free Milk. Beat on medium speed for 1 minute. Spread batter evenly in greased 13”x9” (3.5 L) cake pan. Bake at 350oF (180°C) for 30 to 40 minutes, or until toothpick inserted in centre comes out clean.
While cake is baking, prepare topping. Melt margarine in small saucepan. Stir in remaining ingredients thoroughly. Remove cake from oven and immediately spread topping evenly over cake. Broil 6 inches (15 cm) below element for 2 to 3 minutes, or until bubbly and golden.
Tip:
· If you prefer a more nutty topping, reverse the amount of nuts and coconut.
· Use very ripe bananas for the best flavour.
