cup white All Purpose flour

cup whole wheat flour

cup rolled oats

tsp ground cinnamon

tsp baking powder

tsp baking soda

tsp salt

ripe banana, mashed

cup chopped walnuts

cup light brown sugar

Tbsp vegetable oil

large organic eggs

cup reduced-fat buttermilk

Step 1
Pre-heat oven to 400
Step 2
Line 12 muffin tin with paper liners. In a stand mixer combine first 8 ingredients, blend on low speed for 2 minutes. Add walnuts, sugar, oil, eggs and buttermilk, blend for 2 minutes on medium speed then add vanilla extract.
Step 3
Using an ice cream scoop, portion batter evenly into the tin, top each muffin with 3-4 chocolate chips and bake for 15 minutes.

Muffins will stay fresher longer if stored in plastic bag or air tight container.
