BBQ chicken breast

slices bacon

red peppers

Vidalia onion

clove garlic

handful spinach

cups heavy cream (35%)

cherry tomatoes

medium eggs

cup rotini pasta (or pasta of your choice)
salt and pepper
Parmesan cheese, grated

Step 1

Season chicken breast with One Rub, barbeque the chicken, dice and set aside.

Step 2

BBQ or roast red pepper, dice and set aside.

Step 3

Cook bacon, dice and set aside.

Step 4

Finely chop garlic, set aside.

Step 5

Thinly slice onion, set aside.

Step 6

Halve cherry tomatoes, set aside.

Step 7

Beat eggs, mix in 1 cup of heavy cream, a pich of salt and pepper, put in fridge.

Step 8

Cook pasta.

Step 9

While pasta is cooking, lightly butter and or oil large frying/sauce pan.

Step 10

Over medium heat add garlic, onion, stir and let sauté for one minute (do not let garlic burn).

Step 11

Add red peppers, cherry tomatoes and chicken, stir and lightly sauté for 2 minutes combining flavours.

Step 12

Add egg and cream mixture, bring to light simmer, add spinach, stir all ingredients – this is your sauce (add more cream if necessary).

Step 13

Strain pasta, portion on plate, cover pasta with creamy carbonara sauce.

Step 14

Lightly finish with Parmesan cheese.
