Black Diamond Mozzarella Croque-Monsieur

1 loaf country-style bread (sourdough), sliced and toasted
2 cloves garlic
2 cups (500 mL) Black Diamond Partly Skimmed Mozzarella Cheese, shredded
1 cup (250 mL) cream cheese
4 tablespoons (60 mL) cream
4 tablespoons (60 mL) tomato sauce
2 tablespoons (30 mL) Dijon mustard
8 slices cooked ham
1 roasted red sweet pepper, cut into strips
15 chives, minced
salt and pepper to taste
1. In a large bowl, combine cream cheese, cream, tomato paste, Dijon mustard, and chives. Add salt and pepper to taste.
2. Cut garlic cloves in half and rub on toasted bread slices.
3. Spread cream cheese mix on each slice of bread, add cooked ham. Spread a spoonful of cream cheese mix on top of ham, cover with peppers and Black Diamond partly skimmed mozzarella cheese.
4. Bake in preheated oven at 400°F (200°C) for approximately 10 minutes.
