lb(s) fresh cultured blue mussels

Tbsp butter
1
can cream of mushroom soup (250g)
1
can cream of asparagus soup
2
Tbsp sherry
1
dash black pepper, freshly ground

Step 1

Rinse fresh blue mussels in tap water.

Step 2

Remove meat from shells by steaming.

Step 3

Grease a casserole dish with the butter and place mussel meat in it.

Step 4

Top with soup and add the sherry.

Step 5

Sprinkle with freshly ground black pepper.

Step 6

Bake in a moderate oven for 25 minutes.

Step 7

Serve immediately with rice or vegetables.
