A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour; you have to add your own!
Directions for: Brussels Sprouts with Orange Brown Butter
sticks (1/4-cup or 4 tablespoons) of butter
Tbsp frozen orange juice concentrate
lb. fresh or frozen Brussels sprouts
Salt to taste
1. Melt the butter in a medium saucepan. When its foam has subsided, gently swirl the pan, continuing to heat the butter until it begins to brown. When it is a deep golden brown, with a rich nutty aroma, carefully stir in the orange juice concentrate. It will spatter a bit, be careful!
2. Steam the Brussels sprouts until tender and season with salt. Add the orange brown butter and toss well.
