1 pound carrots, peeled and grated

2 cups milk

½ cup ricotta cheese

2 tablespoons honey

¼ cup raisins

2 tablespoons chopped pistachios

1 teaspoon ground cardamom

pinch ground cloves


1. Put everything into a large saucepan and bring to a boil over medium heat. Reduce heat to low and simmer, stirring occasionally, until the carrots are soft and the mixture has thickened, about 15 to 18 minutes. Serve warm.
