Chocolate Cherry Shortcakes

2 cup self-rising flour

½ cup Dutch cocoa

½ cup sugar & additional for dipping

¼ tsp kosher salt

1 cup dried cherries

1 cup semi-sweet chocolate chips

2 cup 35% cream

6 Tbsp melted butter (for dipping)

Cherries Jubilee

⅔ cup granulated sugar

1 vanilla bean, split

3 cup pitted cherries

2 Tbsp cornstarch


Chocolate Cherry Shortcakes

1. Preheat oven to 400F. Stir flour, cocoa, sugar and salt together until combined, then stir in dried cherries & chocolate chips. Add the cream and stir until mixture comes together in a somewhat stiff dough. Turn out onto cutting board and use your hands to press the dough into a square about 2 inches thick. Cut this dough into 9 squares. Dip squares into melted butter and then into sugar, pressing lightly so it adheres. Place 2 inches apart on an ungreased baking sheet. Bake 15 minutes or until they spring back when pressed lightly.

Cherries Jubilee

1. In saucepan, bring sugar, vanilla bean and 3/4 cup water to boil; reduce heat to medium and simmer for 3 minutes. Add pitted cherries; return mixture to simmer. Stir cornstarch with 2 tablespoons cold water; stir into cherry mixture and cook, stirring, for 1 minute or until thickened. Discard vanilla bean.
