Chocolate Layer Cake

1 ¾ cups all-purpose flour

2 cups granulated sugar

¾ cup cocoa, sifted

1 ½ teaspoons baking soda

1 ½ teaspoons baking powder

1 teaspoon salt

2 eggs

1 cup Natrel Lactose Free Milk

½ cup vegetable oil

2 teaspoons vanilla

1 cup boiling water


½ cup lactose free margarine

4 cups icing sugar, sifted

½ cup cocoa, sifted

⅓ cup Natrel Lactose Free Milk

1 teaspoon vanilla


Chocolate Layer Cake

1. Combine first 6 dry ingredients in large mixer bowl.

2. Add eggs, Natrel Lactose Free Milk, oil and vanilla. Beat on low speed of electric mixer 1 minute to blend then on medium speed 2 minutes.

3. Add boiling water. Mix well (batter will be thin). Pour batter into 3 greased 9” (1.5 L) round cake pans, dividing evenly.

4. Bake at 350°F (180°C) for 25 to 30 minutes, or until toothpick inserted in centre comes out clean. Cool 10 minutes in pans then remove layers to wire rack and cool completely.


1. Beat all ingredients together until smooth and creamy. Fill and frost chocolate cake layers.
