lb(s) chorizo sausage

Tbsp olive oil
2
clove garlic, minced
1
Tbsp shallots, chopped fine
6
shrimp peeled, and deveined- tail on 2½5’s
6
fresh mussels, cleaned
6
clams, soaked and washed
¼
cup white wine
3
Tbsp chopped Italian parsley
Salt and pepper to taste
Basil cress for garnish

Step 1
Preheat a sauté pan with olive oil over medium heat.
Step 2
Remove the meat from the chorizo sausage and add to the hot pan. Add the shallots and minced garlic and continue to cook for approx. 5-7 minutes.
Step 3
Add the fresh clams and cover for 2 minutes. Add the shrimp, mussels and deglaze the pan with white wine. Cover the sauté pan and continue to cook until the clams and mussels open.
Step 4
Add the fresh parsley and season with salt and pepper. Remove from heat and discard any unopened mussels or clams.
Step 5
Divide the sausage and seafood onto two plates and garnish with the fresh basil cress. Serve while hot with crusty bread.
