Citrus Salad with Walnuts

⅓ cup white wine vinegar (75 ml)
2 tablespoons walnut oil (30 ml)
⅓ cup grapeseed oil (75 ml)
coarse salt and freshly cracked black pepper, to taste
½ cup walnuts, toasted and skinned (125 ml)
4 cups lamb’s lettuce, cleaned (1 litre)
4 oranges, segmented
1. To make the vinaigrette, whisk together the white wine vinegar, walnut oil, grapeseed oil, salt and pepper in a small bowl until combined.
2. Combine the walnuts, lamb’s lettuce and oranges in a medium bowl. Toss with vinaigrette. Serve immediately.
