Don’t skip salting the cucumbers, this will remove the excess moisture in the cucumbers so that the salad is rich and creamy instead watery.

English cucumber, sliced, about ⅛-inch thick

small sweet onion, thinly sliced
½
cup sour cream (125 ml)
¼
cup chopped fresh dill (60 ml)
Juice of ½ lemon
1
tsp grated fresh horseradish (5 ml)
Coarse salt and freshly cracked black pepper

Step 1
Place sliced cucumbers in a colander over a bowl. Sprinkle with salt. Allow to drain for 20 minutes. Remove juice and discard.
Step 2
Add drained cucumber to a large bowl. Add onion, dill, horseradish and lemon juice. Mix to combine. Toss with sour cream. Season the salad with salt and pepper to taste.
