Chocolate Sauce

Preheat oven to 400 degrees Fahrenheit.
Mix coconut with mascarpone.
Butter 4 sheets phyllo dough, place on top of each other and cut into quarters.
In centre of each square place 1/4 cup of raspberries (62 ml), top with a teaspoon of sugar (5 ml) and a 1/4 cup cheese mixture (62 ml)
Pull phyllo up into a purse and twist top. Butter outside and sprinkle with coarse sugar.
Bake on a sheet pan for approximately 10 to 12 minutes, or until golden brown.
Heat cream, sugar and butter until it comes to a boil.
Meanwhile put the chocolate in a food processor and process until finely chopped.
Slowly add hot cream with machine running. Add vanilla extract.
Pour chocolate in a squeeze bottle. Decorate plate with chocolate sauce, a sprinkle of coconut, a few fresh raspberries and a small sprig of mint.
Place cooked purse in centre and serve.
