Fennel Salad

bulb fennel, julienned

cup (120 g) arugula

cup (150 g) wild blueberries

oranges, segmented, juice reserved
½
cup (75 g) walnut halves, coarsely chopped
Orange Dressing
reserved orange juice from Fennel Salad recipe

tablespoons (15-20 mL) honey

cup (60 mL) red wine vinegar
¼
cup (60 mL) olive oil
salt
pepper

Step 1
When ready to serve, place all ingredients in the same bowl as Orange Dressing.
Step 2
Gently toss to combine and serve.
Step 3
Place all ingredients in a bowl, except for olive oil.
Step 4
Gradually whisk olive oil in bowl until combined. Set aside until assembly.
