ingredients

Forever Nuts Rocky Road Ice Cream

cup sugar
1
cup milk
5
tsp DAVIDsTEA Forever Nuts Tea
2
eggs
2
Tbsp cocoa powder
2
cups 35% cream
1
cup mini marshmallows
1
cup semi-sweet mini chocolate chips (or regular chocolate chips)
½
cup slivered almonds

Strawberry & Elderflower Cordial Topping

Tbsp bottlegreen Strawberry and Elderflower Cordial

g white chocolate

Step 1

In saucepan combine milk, sugar and tea. Bring mixture to a simmer and let steep for 2-3 minutes. Strain mixture.

Step 2

In a separate bowl, crack eggs and temper with the tea mixture (stream hot tea liquid into eggs while whisking to avoid lumps). Add cocoa powder and mix in.

Step 3

Return bowl to heat on low and keep whisking until custard becomes thick. Let cool and refrigerate for minimum 2 hours.

Step 4

In a separate bowl, whip cream until soft peaks form and fold into cooled custard. Put combined custard mixture in airtight container and freeze for 2 hours.

Step 5

Mix the half-frozen ice cream to break up crystals and fold in marshmallows, mini chocolate chips and slivered almonds.

Step 6

Put back in freezer until firm. Scoop and serve with your favourite toppings!

Step 7

Bring cream to a boil.

Step 8

Add to the chocolate and stir until combined.

Step 9

Add cordial and mix. 
Drizzle over your favourite ice cream!
