Nothing beats the heat like a chilled gazapacho, made with a variety of melons and fruits. Note: Also allow 4 hours to overnight for marinating time. Courtesy of The Burnt Tongue.
1 cantaloupe, peeled, chopped and seeded
1 honey dew melon, peeled, chopped and seeded
¼ watermelon, peeled, chopped and seeded
2 mangoes, peeled and chopped
5 peaches, peeled, chopped and pitted
2 cup strawberries, stems removed
1 cucumber, chopped
2 small red onion, peeled and chopped
2 cup fresh orange juice
1 L plain yogurt
2 bunch fresh mint, plucked leaves
1. Place all ingredients in large bowl, except yogurt and only half the mint. Cover, refrigerate and let marinate for 4 hours or overnight.
2. Process ingredients in blender until very smooth, incorporate yogurt and adjust seasonings with salt.
3. To serve, ladle into bowls and garnish with reserved mint.
