Tbsp sherry vinegar (60 ml)

tsp Dijon mustard (5 ml)
cup olive oil (75 ml)
Coarse salt and freshly cracked black pepper

lb(s) of mixed greens or other lettuces (454 g)

minneola orange, segmented

Step 1

Combine sherry vinegar and mustard in a medium non-reactive bowl. Gradually whisk in olive oil. Season with salt and pepper.

Step 2

Stir the orange segments into the dressing and let sit about 15 minutes. This will give a better flavour to the dressing and the orange segments.

Step 3

Toss greens with dressing and orange segments.
