Gingerbread Men Cookies

These warm, chewy gingerbread cookies make for a perfect holiday snack. Courtesy of Pastry Chef April Iverson.

1 ½ cups butter

1 cup brown sugar

1 teaspoon baking soda

¾ teaspoon salt

2 ¼ teaspoons ground ginger

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon ground cloves

2 eggs

¾ cup molasses

3 ⅓ cups pastry flour


1. Sift pastry flour. In a large bowl, combine butter, brown sugar, spices and salt until well incorporated. Add molasses and mix. Add eggs one at a time, stirring into mixture. Then add pastry flour & baking soda and mix just till combined.

2. Allow to rest in fridge for at least 1 hour and roll out to 1/4 inch thick. Using a shaped cookie cutter, cut out gingerbread men and women.

3. Bake at 350ºF until golden, about 7-10 minutes.
