can (130 g) Gold Seal No Drain Solid Light Tuna with sunflower oil

oz baby spinach leaves

tomatoes, sliced

English cucumber, thinly sliced

can (12 oz) white beans, drained

Tbsp olive oil

Tbsp lemon juice
cracked black pepper, to taste
chopped parsley or dill, optional

Step 1
Divide spinach, tomato, cucumber, beans and tuna among four plates.
Step 2
Whisk oil, lemon juice, and pepper in small bowl; drizzle over salad.
Step 3
Sprinkle parsley or dill over top and serve with whole-wheat toast.
Step 4
Chef’s Suggestion: For a hint of spice add thinly sliced red chilli pepper.
