A French-Canadian classic, Greek-style! Potato fries, Kalamata olives, Greek cheese, gravy and crumbled chorizo sausage make for one hearty comfort meal.
1 L corn oil
3-4 cups skin-on potato fries, blanched (Russet potatoes)
2 oz chorizo sausage, crumbled
2 oz pork sausage
¼ cup Kalamata olives, halved
1 ½ cup Greek cheese ("Kesseri"), shredded
1 cup pan chicken gravy
2 tsp fresh parsley, chopped
1. Preheat corn oil in a deep pot to 350 degrees F. In a small sauté pan, cook the chorizo and pork sausage until cooked through. Add the chopped olives to the chorizo and gently mix together.
2. Fry the blanched skin on potato fries in two batches until golden and crispy.
3. Season the fries with salt and pepper and place into a large serving bowl. Top the crispy fries with the cooked sausages and olives with the shredded cheese and parsley. Pour the hot chicken gravy all over the top and garnish with sliced chives. Serve while still hot and enjoy.
