For the Chicken

oz chicken breast

medium portabello mushrooms
10
sweet grape tomatoes

Tbsp croutons

Tbsp bacon bits
2
Tbsp parmesan cheese
2
lemon wedges

cup chopped romaine lettuce
For the Dressing
3
Tbsp olive oil
1
Tbsp lemon juice
2
garlic cloves roasted and chopped
salt

Step 1
Grill or barbecue chicken breast – 5 minutes per side.
Step 2
Set aside to cool.
Step 3
Gently wash portabello mushrooms and cut into bite size pieces.
Step 4
Thoroughly wash grape tomatoes.
Step 5
Roast garlic cloves in hot oven – 350° for 10 minutes and allow to cool.
Step 6
Once cooled, chop into small pieces.
Step 7
Saute mushrooms for approximately 2 minutes.
Step 8
Add tomatoes and saute for one more minute.
Step 9
Whisk all dressing ingredients together until smooth texture is achieved.
Step 10
In medium size mixing bowl place romaine lettuce and add dressing, croutons and bacon bits.
Step 11
Mix thoroughly.
Step 12
Place in serving bowls or plates.
Step 13
Top with sliced chicken breast, sauteed mushrooms, tomatoes and lemon wedges.
Step 14
Finish with freshly grated Parmesan cheese.
