ingredients

jar sauerkraut (24 oz/700 mL); alternatively, sauté 1 onion with approx 8 cups of coleslaw mix until wilted then add ½ cup extra water to casserole
cooking spray
per layer

jar (24 oz/700 mL) rinsed sauerkraut

cup uncooked long grain rice

Tbsp real bacon bits

can (24 oz/680 mL) tomato sauce, spicy red peppers and chilies

Tbsp onion flakes

tsp Mrs. Dash Original seasoning

cottage cheese; repeat this exact layer one more time.

cooked honey ham (5 ½ lbs/2.5 kg)

can ginger ale (12 oz/355 mL)

Step 1

The night before…

Step 2

Layer in this order; Sauerkraut, uncooked rice, bacon bits, tomato sauce, onion flakes and Mrs. Dash Original. Repeat this layer one more time.

Step 3

Cover tightly with foil and set aside in fridge.

Step 4

Spray an oven safe pan (close to the size of the ham) with cooking spray.

Step 5

Make tiny slits along top of ham. Place ham in pan.

Step 6

Pour ginger ale over ham and cover tightly with foil or lid and place in hot oven. Go off to work!!!When you are ready to make dinner…

Step 7

Reset oven to 350ºF.

Step 8

Remove foil from ham and leave it in the oven.

Step 9

. Put covered cabbage casserole in oven along side the ham.

Step 10

Set timer for 50 minutes.

Step 11

Rinse peas in a colander.

Step 12

Place in a microwave-safe pot or casserole dish. Cover and microwave at high for 3 minutes.

Step 13

When ham and cabbage casserole are ready, warm peas for 1 more minute. Add butter if you must. Enjoy!
