clove garlic
Juice of ½ lemon (2-3 tbsp/30-45 ml)

Tbsp Dijon mustard (15 ml)

Herbs and Greens

cup fresh tarragon (60 ml)

cup fresh mint (60 ml)

cup fresh cilantro leaves (60 ml)

bunch of fresh parsley, leaves only

small bunch of basil, leaves only

bunch watercress, thick stems discarded

small bunch mixed greens or arugula
sea salt and freshly cracked pepper

Step 1
Whisk together garlic, lemon juice and Dijon. Slowly drizzle in olive oil to form an emulsification and season with salt and pepper.
Step 2
Toss together all herbs and greens in a large bowl and season with salt and pepper. Add dressing and toss well.
