Nothing beats homemade! A vegetarian-friendly soup with onions, garlic and of course, tomatoes.

ingredients

Tbsp olive oil

medium onion, chopped

clove garlic, minced

oz can crushed tomatoes
3
cup low-sodium chicken stock
1
cup whipping cream
½
tsp salt
1
tsp sugar

Step 1

Sauté the onion and garlic over medium heat in a large pot, until softened.

Step 2

Add the tomatoes and chicken stock; bring to a simmer.

Step 3

Add cream; simmer for 5-10 minutes to combine all the flavours.

Step 4

Add ½ teaspoon of salt; if the tomatoes are very acidic, add 1 teaspoon sugar to round out the flavour.

Step 5

Pull off the heat and allow to cool slightly; purée with and immersion blender; serve.
