Hot Rummy Lemonade

"I love a glass of mulled wine as much as the next person, but it’s nice to mix things up a bit and this spicy number has a bit more attitude and really packs a punch – it’ll put fire in your belly and will definitely get your jingle bells ringing."

This delicious recipes yields roughly 4 1/2 litres, enough for 20 to 25 people.

Directions for: Hot Rummy Lemonade

Ingredients

3 x 1 L bottles cloudy apple juice

2 thumb-sized pieces fresh ginger

1 cinnamon stick

juice from 12 lemons

runny honey

20 - 25 x 25mL shots of rum

Directions

1. Pour the apple juice into a large pan along with 2 litres of water and turn the heat to high. Slice up the ginger, leaving the skin on, and add to the pan with a stick of cinnamon. Bring to the boil, then reduce the heat to low and leave to simmer for around 15 minutes. If you really love ginger and want a fiery kick, make it the day before, let the ginger go cold in the liquid and leave overnight to infuse.

2. Squeeze in the lemon juice, then strain the liquid through a sieve. Bring just up to the boil, then sweeten to taste with the runny honey and give it a good stir.

3. To serve, add a shot of rum to each heatproof glass or mug then top with the hot lemonade. Bottoms up!
